🍽️ Cozy Turkey Meatballs Over Mashed Potatoes

A simple, budget-friendly dinner made with Amazon Prime staples

Some nights call for a warm, comforting meal that doesn’t take much effort — just real ingredients, simple steps, and pantry staples you already have. This turkey meatball dinner is exactly that. It’s cozy, filling, and made almost entirely with ingredients I keep stocked from Amazon Prime.

It’s the kind of meal that feels homemade without being complicated, and it stretches beautifully for leftovers.

🥣 Ingredients

For the Turkey Meatballs

1 lb ground turkey

5 tbsp bread crumbs

Salt

Black pepper

Paprika - 1/2 tsp

1 egg

For the Creamy Sauce

1 small onion, finely diced

2 cloves garlic, minced

tomato paste - 2 tbsp

½ cup whole milk

1 cup water

½ tbsp cornstarch

Salt

Black pepper

For the Mashed Potatoes

3-4 medium russet potatoes

Butter

Salt

Black pepper

Whole milk

🍳 How to Make the Turkey Meatballs

1. Mix the meatball ingredients

In a bowl, combine ground turkey, bread crumbs, egg, salt, pepper, and paprika. Mix gently — just enough to bring everything together.

2. Shape and cook

Roll into small meatballs (around 20)and brown them in a pan with a little oil and butter.

🧅 Make the Creamy Sauce

1. Sauté the aromatics

In the same pan, add the diced onion with a dash of salt. When soft, add garlic. In 20sec add the tomato paste and build the sauce.

2. Build the sauce

Whisk the cornstarch into the water, then pour it into the pan along with the milk. Season with salt and pepper.

3. Simmer

Add the meatballs back in and let everything simmer until the sauce thickens and the meatballs are fully cooked through.

🥔 Make the Mashed Potatoes

1. Boil the potatoes

Peel, chop, and boil until fork-tender.

2. Mash

Add butter, milk, salt, and pepper. Mash until creamy and smooth.

🍽️ Serve & Enjoy

Spoon the creamy turkey meatballs over a bed of warm mashed potatoes. It’s simple, cozy, and perfect for a weeknight dinner.

To make it a better balanced meal I added a big serving of roasted vegetables - broccoli and cauliflower.
